i just started a new job two weeks ago, and am totally in love with my weekends. when i was unemployed all summer, i didn’t really feel compelled to do anything with my free time… because i had so much of it. but now! the weekends are so magical and i’m in love with them.
a friend asked for a recipe for Tortilla Soup, because it’s all i’ve been talking about for days (just made some the other day that i’ve been living off of, so happily)… realized i should post it here!

TORTILLA SOUP
1 onion, chopped
3 cloves garlic, minced
1 tablespoon olive oil
2 teaspoons chili powder (i used green chile powder, but any is fine)
1 (28 ounce) can crushed or diced tomatoes
1 (10.5 ounce) can condensed chicken or vegetable broth
1 1/4 cups water
1 cup whole corn kernels, cooked
1 cup posole (hominy)
1 (4 ounce) can chopped green chile peppers (i used like 4)
1 (15 ounce) can black beans, rinsed and drained
crushed corn tortilla strips
chicken, if yr a meat eater (i used 1 breast)
In a medium stock pot, heat oil over medium heat. Saute onion, chicken and garlic in oil until soft. Stir in chili powder, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
Stir in corn, hominy, chiles, beans. Simmer for 10 minutes.
Ladle soup into individual serving bowls, and top with crushed tortilla chips and cheese or whatever else you’d like.
